I prefer eating a good wholesome vegetarian meal in the day, and a non vegetarian meal for dinner. On my plate today – Channa dal, chappan kaddu subzi and missi roti layered with a bit of organic ghee..along with my homemade fresh turmeric+garlic+green chilli pickle on the side.
Sharing a simple Chappan Kaddu recipe with you all. Although it’s not commonly eaten at my home, I like to have it once in a while – as it’s rich in vitamins & minerals. (Tastes a bit like zucchini) .
You need: 2 chappan kaddu sliced , 1 onion chopped, 1 tomato chopped, 3-4 cloves, 1 bay leaf, 1 cinnamon stick, 2-3 green cardamom, 1 red chilli, 1 tsp garlic paste, 1 green chilli sliced , 1/4 jeera, salt to taste, 1/4 tsp haldi, 1 tsp ginger paste. 1-1/2 tsp organic mustard oil.
Method:
-In a pan heat oil and add jeera, red chilli, green cardamom, cloves, green chilli, cinnamon stick, bay leaf. Cook for a minute.
-Next add ginger paste, garlic paste and onions. Cook for a couple of minutes.
-Add tomatoes and cook till they turn soft.
-Add chappan kadu and salt. Cook for 2-3 min on high heat. Then cook on low heat for 15 min. Keep checking/stirring in between.
